Green, red, white and oolong teas all come from the plant Camellia Sinensis; this plant loves to grow in hot sunny climates. In China teas of all kinds are called 'cha'.

The teas are in different 'color' groups due to the way they are prepared. The result of these preparation methods is that green tea retains much more of the health benefits than the red or black tea does.

In the middle of these two teas you have Oolong. Oolong is a partially fermented tea, whereas black tea is fully fermented and green tea is non-fermented. Oolong is very popular in the South of China and is the kind of tea used in many Chinese restaurants.

Green teas are mainly produced in China, Taiwan and Japan. Famous Japanese green teas includeSencha, Matcha, Bancha, Genmaicha and Kabusecha. Famous Chinese teas include Long Jin, Bi Lo Chun, Mao Feng,Tie Guan Yin, Pu-Erh and Gunpowder.

Green teas are produced by drying them in the sun and then cooking them in big open pans. The special cooking method stops the tea from fermenting thus retaining all the fine qualities of the green teas.

Oolong teas are produced by first drying them in the sun, they are then sorted and cooled. The tea is cooked at a high temperature by a highly skilled worker. This process is very quick to retain the full flavor and color of the tea. After cooking the tea is rolled or massaged by the workers. This stage is very important for the teas to develop their flavor and smell. The Oolong teas are then baked a few times very quickly and with reduced heat each time.

These processes result in fine colored and full flavored tea. One of the great things about these teas is you can use the leaves more than once. A cup or pot of tea can be refilled at least 3 times or even more for some stronger teas. The Chinese say that the second brew is the best!

The green tea information we have available to us today suggests that green teas have many health benefits. They contain high amounts of antioxidants, they have fat absorbing qualities, antifungal qualities and can even help in the treatment of cancer.
