When choosing tea it is important to note that the quality of some of the tea available today is not so high. Some of the brightly packaged and heavily marketed green teas which appear in stores these days are really not so high quality.

It is however possible to find some wonderfully flavored and colorful tea if you know where to look. The high class teas from the country known as the Central Kingdom are an excellent place to begin the journey. Some of the famous names are Longjing or Dragon Well tea, Maofeng, Biluochun and Maojian.

These chinese teas are classed as fully green, non-fermented whereas Oolong teas are semi-fermented and although many are very green in color they are not 'officially' green.

The teas are produced in some of the most beautiful areas of China including Yunnan, Hunan, Jiangsu and Zhejiang provinces.

There are so many different styles of leaf to discover; from small curly leaves to thin pointed leaves, very flat leaves and even the amazing blossoming style which has a flower tied in the center of the leaves.
